Roasted Garlic Basil Chicken with Squash
  • 1 whole pastured chicken (I get mine from US Wellness Meats)
  • 2 zucchini or yellow squash, cubed
  • 1 large or two small butternut squash, peeled and cubed
  • 1 bunch fresh basil
  • 6 tablespoons tin star foods ghee
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • 1 head of garlic, peeled and chopped
  • salt and pepper, to taste
  1. Preheat oven to 425.
  2. In a food processor, combine ghee, garlic, basil, oregano and onion powder plus salt and pepper, to taste.
  3. Add 1-2 tablespoons mixture to chopped veggies in a large baking dish and mix until well combined.
  4. Rinse chicken and pat dry.
  5. Place chicken on baking rack in baking dish.
  6. Rub remaining basil and garlic mixture all over the chicken. With a knife, gently lift the skin and carefully push some of the mixture underneath.
  7. Cook chicken and squash on 425 for 1 hour.
  8. After an hour, turn the oven down to 375 and cook for another 45 minutes - 1 hour until skin is golden and the internal temperature reads 165.
