Paleo Skillet Breakfast
  • ¾ pounds ground pork
  • 1 large yukon gold potato, peeled and finely chopped
  • ½ yellow onion, finely chopped
  • ½ red pepper, seeds removed and finely chopped
  • ½ green pepper, seeds removed and finely chopped
  • 1 teaspoon Primal Palate Breakfast Blend
  • 1 teaspoon Primal Palate Meat & Potatoes Blend
  • ½ avocado, sliced
  • ½ batch two-minute pico de gallo or other salsa
  1. Set the two small skillets aside, you will be using these to plate and cook the eggs.
  2. In a larger skillet, sauté sausage with breakfast blend seasoning until ¾ths of the way done.
  3. Remove the sausage and set aside, but keep the drippings in the pan.
  4. Over medium heat, sauté the potatoes, onions and peppers with meat & potatoes seasoning until the potatoes and veggies are soft.
  5. Add the sausage back in and mix to combine.
  6. Remove large skillet from heat and separate into the two separate smaller skillets.
  7. Turn oven to broil
  8. In each skillet, create two deep indentations in which to crack the eggs.
  9. Crack two eggs into each skillet and place onto a rack two levels from the broiler for about 7-10 minutes or until eggs are cooked to desired firmness.
  10. Keep a close eye on the eggs so that they don't overcook.
  11. Remove from oven and top with pico de gallo and sliced avocado.
  12. Serve hot!
