I’ve been pretty obsessed with berry compote for a while.

First of all, berries are exceptionally nutritious… not to mention super tasty. Secondly, compote is extremely versatile (meaning a million different variations/uses) and last but not least, it is a breeze to make.

I primarily use compote as a topping for pancakes  or chia pudding. But really, the sky’s the limit!

Ingredients
  • 10oz frozen blueberries (normally one full bag if you're buying them pre-frozen), or any frozen berry
  • ½ teaspoon vanilla extract
  • 1 tablespoon coconut sugar
Instructions
  1. Place frozen blueberries in a small saucepan.
  2. Turn heat to medium and wait until it comes to a light boil.
  3. Simmer on low until most of the liquid disappears, making sure to continually stir and mash berries, about 10 minutes.
  4. Remove from heat and serve right away or chill and reheat.

    We make something very similar to this …. but …. skip the vanilla and add a VERY finely chopped jalapeño. Delish on grilled salmon. Thanks for the reminder to get some blueberries!
