I’ve been pretty obsessed with berry compote for a while.
First of all, berries are exceptionally nutritious… not to mention super tasty. Secondly, compote is extremely versatile (meaning a million different variations/uses) and last but not least, it is a breeze to make.
I primarily use compote as a topping for pancakes or chia pudding. But really, the sky’s the limit!
Blueberry Compote

Ingredients
- 10oz frozen blueberries (normally one full bag if you're buying them pre-frozen), or any frozen berry
- ½ teaspoon vanilla extract
- 1 tablespoon coconut sugar
Instructions
- Place frozen blueberries in a small saucepan.
- Turn heat to medium and wait until it comes to a light boil.
- Simmer on low until most of the liquid disappears, making sure to continually stir and mash berries, about 10 minutes.
- Remove from heat and serve right away or chill and reheat.
We make something very similar to this …. but …. skip the vanilla and add a VERY finely chopped jalapeño. Delish on grilled salmon. Thanks for the reminder to get some blueberries!
